    Well, I grew up in Geauga County, Ohio. That's Maple Syrup country. While it is expensive, we just make our own at home for the cost of propane to boil it. You get about a quart of syrup per four or five gallons of sap.

    Anyhow, butter and maple sypup are what belong on a proper pancake, with either sausage or corned beef hash on the side. I prefer sausages, but won't turn up my nose at the hash.

    The real secret is in making the pancakes themselves. Substitute 1/4 or your milk with seltzer water. Mix it just enough to be called mixed. Don't over work it because you'll make the batter stiff and flatten the seltzer. Pour it into the skillet. The magic happens when you flip them. Watch them cakes rise like there's no tomorrow. They soak up lots of butter and syrup then, too. Tastes much gooder than a plain waffle.

    I have always been a big breakfast eater and if I lived near a Cracker Barrel or a Bob Evans I would probably be there at least once a day an weigh 360 lbs instead of 260. So i try to stick to a single pastry and glass of milk or a bowl of cereal to keep down the calories. But I really like making my own breakfast on the occasional weekend, especially in winter.
    My favorites are: 1. Whole wheat Belgian waffles smothered in butter and real maple syrup topped with two over-easy fried eggs and a rasher of bacon on the side; 2. French toast made with slices of cinnamon bread with the same toppings and sides; 3. Pigs in a blanket---3 pancakes each wrapped around a pair of pork sausages topped with butter and maple syrup and a pair of OE eggs on the side.

    We will save the others with biscuits and sausage gravy and country cured ham and corned beef hash and eggs Benedict variations for another day.

    Cracker Barrel has a seasonal french toast they have in the fall made from apple struedel bread that is topped with a cinnamon caramel type syrup. OMG it is luscious!

    Local honey on my sweet pancakes. I use a Texas recipe from 1882, also have a recipe for apple butter.

    Regular old run-of-the-mill Bisquik or sourdough pancakes with a hashbrown, American cheese and sauteed onions in between, covered in sausage gravy.

    ok it's 1 1/2 cup flour, 3 Tablespoons sugar, 2 eggs, 5 tablespoons melted butter, 3 teaspoons baking powder, 3/4 tsp salt, 3/4 cup milk. Mix dry ingredients, then add liquids: eggs, butter, and milk. If dough's thick add milk or cream. Sweet Griddle Cakes. Will add to your waistsize.
