First texturing got popular to cover up shoddy framing, drywalling amd mudding.
Second it's hard to paint as it is so porous - bare sheetrock absorbs very little in comparison.
Even though my ceilings are all 7 foot I used kitchen/bathroom semi gloss and a brush to scrub it in 15 years ago. Goes slow with long rests for the arm working overhead. Now I just wipe with a soapy towel about once a year. I smoke my pipe - we put just a touch of blue in the white paint to counter the yellow shifting tendency, can't tell its there but the ceiling is still white.

7 foot vs 8 foot ceilings save almost 15% on heating and cooling what is really unused insulated air space - unless you play pro basketball or like ceiling fans.

Pants is only a present tense verb here. I once panted, but it's all cool now.
