    Shelter Point

    Finally the distillery at Shelter point just outside of Campbell River on Vancouver Island offered it's first single malt, It's barely 5 years old so still very young but a wonderful expression and will be incredible when it gets some age on it The public was all chanting that we wanted it sooner but the master distiller said No you only get one chance at offering your inaugral run and so it must be the very best you can make......he was so rightClick image for larger version.

    That was going to be my contention.... That while it may be great that new distilleries are starting up, it may be a good 10-12 years minimum before we actually get to enjoy any of what they have to offer. ;-)

    a Cash flow is needed

    New businesses really do need a cash flow when they start up....Shelter point was making flavoured Vodka's to get their cash flow......With China buying up all the stocks of aged single malts without regard to costs some of the older distilleries are coming up with fairly ingenius marketing methods to promote their 8 year old stock and selling them at prices we are more likely able to afford. Those 8 year olds likely would have been kept for another 2 or 4 years to give it the aging we have grown accustomed to........China's nouveau rich really are changing the way of things that we thought we controlled and would have forever...... profits are profits no matter who the buyers are......... just my opinion though...

    Yes indeed, cash flow is needed. I understand that our new local distillery here in Hawick will be producing a gin to give them a short term income, as well as opening a visitor centre with guided tours.

    Yes that is so true although some less educated in the fine art of whiskey making may think it does.
    Even the location in the aging warehouse is important in the process.
    My chum had an 18 year old Wiser's Canadian Rye whisky that he kept sealed for 30 years and when he opened it, there was a difference from the new version of their 18 year old expression, but it was because Wiser's had moved their distillery and the water they now use is not from the same source. They employ a different master blender, and there are other environmental issues. Combined they really did make a difference

    A milestone today when four copper stills were delivered to the Borders Distillery here in Hawick. This will be the first legally produced whisky from the Scottish Borders for almost 200 years. By early evening two of the new stills had already been unwrapped from their plastic covers and were being installed indoors. Whisky will be produced by The Three Stills Company, better known for their Clan Fraser blended whisky.
