What a heck of a story. I, too, gained weight during chemo. But neither my cancer nor my side effects were as dramatic as yours. For me, the weight gain had to do with the way chemo affected my lungs and energy level--I just was unable to get any meaningful exercise during the 4 months of treatment. Climbing the stairs to my bedroom was about the limit of what I could handle while I was going through chemo.
I did find that certain foods no longer agreed with me post-chemo. Very fatty fried foods tended to go right through me, although that effect has largely disappeared in the 10+ years since. But I found that adding more veggies and greatly reducing (although not eliminating) the meat and sugar has had a dramatic effect on my weight. Exercise has helped a lot, too.
But good on you for all that you've done. I agree that I'd much rather change my diet than leave this life prematurely. I lost my hair during treatment. But I've often told my students, "I'd rather be a living bald guy than a dead guy with great hair."
Your determination and positive attitude are to be commended!
