I went to a Pagan wedding locally, celebrated around a circle on a hillside. There were 'prayers' to the elements then the rest I found surprisingly similar to a regular church wedding - apart from the bride came in on a horse. Are you going to be outside as you may need one of the 3 inch version of the x-marks kiltpins

I just took a look at the gallery for Maple Leaf Kilts. You may want to check that out before you buy.
I have dealt with Burnett & Struth, and they are very friendly and helpful. You can't go wrong there.

Another option, is why not be the first on the board to try out a kilt from these guys http://www.mapleleafkilts.com/ They are in Ontario, so you may run across them in the future anyway. Plus they carry the Maple Leaf tartan. Not sure about alll the belt loops though, especially the ones on the apron.

I guess I'm the perfect person to answer this question, since I actually have a Maple Leaf tartan hand-sewn traditional kilt from Burnetts and Struth. It's one of the best looking kilt's I've ever seen, and I'm not just saying that because it's mine. The quality is top notch, and they were great to work with. I'd suggest calling them, rather than email though. They tended to only address the first part of emails, rather than the full email.
I've got pictures of it in my gallery (not the greatest...but they'll do), if you want to check the kilt out.
