Personally, I really like the look of a waistcoat, and wish more men wore them -- and I think they especially add a lot to a kilt ensemble. So I'd wear it, even if it were rather warm. If the temperature grew too hot, I'd remove the jacket and still wear the waistcoat -- in my mind, having the waistcoat on adds an extra level of sophistication.
I do agree with Hamish on one point -- I really wish they'd do the backs of the waistcoats properly, from the same material as the front. I have a tartan waistcoat that a dear old lady made for me, and it is tartan front and back. I always get compliments on it.
Sometimes if you ask the company you are ordering your waistcoat from, they will agree to make the back out of the same cloth (for a fee!).
I also have to (respectfully) disagree with Hamish about the tartan neck tie. I think a tartan tie is fine to wear with the kilt, though I stress it is important that it actually match -- as in the cloth comes from the same mill, so all the color tones are exact. But with a five-button vest, I've even been known to wear a tie in a different tartan. However, I would only recommend this if you have a very good eye for matching patterns and color tones. Which is why, for most people, recommending a solid color tie is the way to go. :-)

Thanks Hamish, I am honoured to have such fine advice available to me, and more still from Matt, making it a double honour (a double...good idea, slainte)
I'll go for the grey tie, and in cooler weather, yes I like a waistcoat, even without a jacket.
Weddings and funerals, KiltedBishop, I agree. I'm only wearing this stuff out of respect for the wedding party.
My personal choice for would be colourful kilts, jacobite shirts, celtic long dresses for the lassies with bright ribbons, flowers in the hair etc. and that's for the funerals!! woohoo!!

I knew I liked you Graham. We seem to be cut from the same cloth! I never understood why we make them such somber events...
