Might as well chime in with more info on the cheaper side:
The cheap knife catalogs have several options if you're looking for stainless steel stuff that's not meant for close-up inspection:

The middle one is the larger of the two knife set linked to earlier from Smokey Mountain I think. The top one I've seen in person and It's a little too big to really go in a sock.
I own the bottom one on that list. The handle is cheap plastic but I liked that it looked a little different than the traditional ones and the odd hue to the plastic seemed to work for whatever leather I wore with it since you couldn't tell if it was brown or black. Very cheaply made (as you'd expect for $4) but looked fine for Ren Faires at the time.

Interesting handle but I wished they'd tried just a tad harder on the blade. Wonder if the parts on the handle are worth salvaging for those of us who can't cast our own pewter pieces on a custom one?
