					Thought this might be fun as the wife and I love to cook.  Does anyone have any recipes for Scottish, Irish, Welsh, or even English dishes they want to share?

					I don't know if this is the traditional recipe but this is how I make 'em!
 Stovies
 
 You need:
 
 Potatoes
 Onion
 Stock
 Left over meat (any roast meat is great)
 
 First slice and fry off the onion until soft, throw in the potatoes and add stock (about an inch or two). Cover the pot and watch to make sure it doesn't boil dry. Simmer until the potatoes break down and add the left over meat.
 
 I'm sure there is a better described recipe out there on the interwebs, you can substitute the meat for corned beef or sausages.

					I'm not going to go through the whole marmalade recipe, but here are a couple of hints to make things easier.  Go ahead and use liquid fruit pectin instead of trying to find seville oranges.  This way you can just use regular naval oranges and some lemons, or what ever citrus you want.  You can put small pieces of any number of fruits in the marmalade.  Also, I have had more luck with scraping the little bit of white from the peals that is left off with the end of a very sharp knife held at an angle as if you were sharpening the knife with the peal.  The white needs to be scored just a bit though before scraping.  That's all probably commen knoledge though, LOL!It's kind of fun to experiment with spices if you make small batches.  Brings back memories of when I lived with Grandma...  Ginger works well.

					here's my favorite pudding.Crannochan
 
 1pt Whipping cream,
 1tbsp toasted oats
 1tsp whisky
 2tsp Heather honey
 Blackberries/Raspberries
 
 method
 whip the cream, fold in the whisky,honey, and oats (oats can be toasted in a dry frying pan) then layer in a glass (or othe serving dish) with the fruit.

					While visiting friends in Scotland many years ago, the wife and I had a soup that they called only "Scottish broth."  I believe it had lentils in it and it was delicious. 					for Scotch Broth, firstly, no lentils.
 It's a mutton or lamb stock with diced carrots, turnip, onion, fresh peas and barley added to it.
 quantities are variable.
 I'd say 3oz of barley, a large turnip, a couple of carrots, a large onion, 1/2 a cup of peas, 4 pints stock.
 salt and pepper to taste, garnish with fresh parsley.
 
 for Lentil Soup, (a favourite of mine)
 4pts ham stock,
 2 large diced carrots,
 1 large diced onion
 1 large cup of red lentils.
 
 rinse the lentils very carefully, then chuck everything in the pot together and simmier it until the lentils are soft.
