    recipes

    Pursuant to the X Marks cookbook thread, I'll start the recipe thread with one that my wife absolutely loves. Here's my recipe for chili lasagna. It's not health food, but it's a wonderful supper.

    48 oz homemade chili (OK, you can use canned if you want, but you'll probably need to adjust the rest of your recipe.)
    2 lbs ground beef
    2 lbs cottage cheese
    1 lb cheddar or colby cheese, shredded, divided
    8 oz mozzarella cheese, shredded, divided
    lasagna noodles (I recommend Barilla no-boil)
    salt
    pepper
    chili powder
    1/2 cup flour

    cook and drain ground beef. combine with chili
    mix cottage cheese, 4 oz cheddar, 4 oz mozz, and flour with a pinch of salt, a pinch of pepper and a dash of chili powder.
    mix remaining shredded cheese together.
    put a layer of chili in the bottom of a large baking dish (Mine's 11x16) follow with a layer of noodles, then the cottage cheese mixture, more chili, shredded cheese, then noodles. continue until you fill the dish, making sure you get the top covered with shredded cheese.

    Bake covered in a 350 degree oven until set, about 50 minutes. Uncover and bake until cheese is crusty and bubbly. Let cool 15 minutes. Serves a whole passel of folks. Or feeds two for about three days.

    ok so this is my recipe, its for cake, im not sure but i think that the recipe is brittish.

    youll need:

    300 grs of flour
    300 grs of sugar (bakers sugar)
    300 grs of butter (or 3 sticks unsalted)
    3 eggs.

    And thats it from there you improvise with it, i ussually put some coco powder to the mix and chop dark chocolate and nuts, it tastes sort of like a brownie, and to finish it up i make iccing thats made with 100 grs of dark chocolate, 100 grs of sugar, 1 butter stick, and 3 spoons of milk, you put all that in bain marie and youre done

    This one is really for warmer weather.

    Spanish Cilantro Soup
    Serves 6



    6 tablespoons olive oil
    2 onions, chopped
    2 leeks (whites only), chopped
    3 cloves of garlic, minced
    4 potatoes, peeled & cubed
    7 cups chicken broth
    1 cup coarsely chopped fresh cilantro
    Pinch of cayenne

    Sautee the onions, leeks & garlic in the olive oil for 3 minutes
    Add potatoes &sauté for 1 extra minute while stirring constantly
    Add broth, cover and simmer for 30 minutes, or until potatoes are soft
    Add cilantro and cayenne
    Blend in a blender
    Chill and serve

    Lentils Monasticas
    (the best lentil soup I've ever had

    1 C. dried lentils
    5 C. water
    1/8 t. thyme
    1/8 t. marjoram
    1 T. salt
    3 large chopped onions (I use the big Spanish onions)
    1 grated carrot
    1/4 C. sherry
    1 C. minced parsley
    2 large chopped tomatoes (or 1 pint canned)

    Wash lentils, put in kettle with water, salt and herbs; bring to a boil and simmer 15 minutes. Sauté onion and carrot slowly in olive oil until soft. Add to lentils with parsley, tomatoes and sherry. Simmer 1 hour or until lentils are tender.

    May be served with grated swiss or gruyere cheese in the soup bowl.

    Okay folks here a a couple of mine,

    Irish Whiskey Cake


    1 box yellow cake mix (without pudding)
    1 box instant vanilla pudding
    4 eggs
    1/2 c. oil
    1 c. milk
    1 shot Irish whiskey (1 1/2 oz.)
    1 c. walnuts, chopped
    TOPPING:
    1 stick butter
    1 c. sugar
    1/2 c. Irish whiskey
    Combine all cake ingredients. Mix three minutes with mixer and pour into a well greased tube or bundt pan. Bake at 325 degrees for 40 to 50 minutes.
    Melt butter. Add sugar and whiskey. Cook until sugar is dissolved and has a syrup texture. After removing cake from oven, poke holes with a fork in bottom. Pour 1/2 of syrup mixture over cake, rest in pan 15 to 20 minutes. Remove cake from pan and brush remaining syrup on sides and top of cake.

    Welsh Cookies
    4 c. flour
    1 tsp. nutmeg
    1 3/4 c. sugar
    1 c. butter
    3 eggs
    1 tbsp. milk
    1 tsp. salt
    4 tsp. baking powder (heaping)
    1 c. raisins
    1 tsp. vanilla
    Soak raisins in hot water, drain. Combine flour, butter, salt, baking powder. Add fruit, eggs and vanilla. Roll into 4 rolls, refrigerate. Cut in 1/2 inch slices. Fry in lightly greased skillet, griddle turning only once. Sprinkle with sugar while warm

    Here's a simple soup I threw together for the foks that turned out real well:

    Large onion, chopped
    One bottle of bacon bits (the real ones)
    Two cans of white beans
    Two cans of vegetable broth
    One package of shredded slaw
    Thyme

    Brown the onions and the bacon bits together, then add the other ingredients. Heat until warm and serve with a sprinkle of parmesan cheese.

    This soup gets plenty of salt from the bacon and the veggie broth, so I didn't add any more.

    German Shortbread

    1 c butter (no substitutes)
    1/2 c sugar
    1/4 c rice flour (a must)
    1 3/4 c flour

    Cream butter and sugar add flour until it forms a soft dough. Roll out on floured surface into a 12 x 8 inch square (about 1/4 inch thick). Cut into 48 pieces (1 inch x 2 inches). Pierce each piece with a fork three times. Bake at 325 for about 30 to 35 minutes or until lightly browned.

    (Ok so it's really not German, but mother is so. . . )



    Quick Key Lime Pie

    1 can sweetened condensed milk
    1/2 c lime juice
    1 8 oz tub of Cool Whip
    2 or 3 drops of green food coloring (optional)
    1 9 inch graham cracker pie shell

    Gently fold ingredients together until mixed. Spoon into pie shell. Chill in fridge for several hours or over night.

    My first recipe submission:

    Good Times

    2 bottles Single Malt
    5 close friends
    3 hours good music
    liberally mix with good conversation, steep to inspiration, mellow to cool, repeat as needed.

    A favorite of mine is "Blast Off Beans." They'll keep your pleats dancing in your own wind for a couple days.

    Two cans of refritos (refried pinto beans)
    A couple sticks of butter - think that's 1/2 lb.
    A head of garlic (the whole assembly of cloves, not just one clove)
    A white onion
    About a pound of Monteray Jack cheese
    A bit of chili powder
    Some sea salt
    Some Black Pepper

    Melt the butter in a cast iron skillet.
    Crush or chop up all that garlic, toss it in.
    Chop up the onion, toss it in.

    Saute' the garlic and onion until they're soft
    Add the refritos, keep on low but hot enough to just bubble the beans.

    Shred the cheese and add it to the beans, stir it in.
    Season with just a little bit of chili,
    Add black pepper and sea salt to taste, stir in.

    Let it all bubble up together for a while.

    Serve hot with blue corn chips.

    Put the leftover in the refrigerator, reheat it tomorrow, its even better.

    It'll keep your pleats moving.
