I have to say that water skiing in a utilikilt just doesn't look all that comfortable. It must weigh a ton when wet!

Mine does. Not as much as you might think, though, since it's largely polyester. Mind you, I've never worn mine water skiing. Or snow skiing, for that matter. I have fallen (I was pushed!) into a pool with it on, though. Kilts are not good swimming wear.

I wouldn't worry about the weight. I'd be more concerned about... other things. It's bad enough having your shorts fly up from the rushing water, especially when there are attractive ladies around.
I'm a slalom'er, and hard launches can be a pain if not prepared - literally... Another reason kilted + water sports = not good.
