    I, on the other hand, think that the kitchen is my workshop and thoroughly enjoy cooking. For me, spending 4 hours on a holiday meal is pure heaven. Food is love after all !

    Here is a kid friendly, diabetic friendly, recipe.

    Peach "Ice Cream"

    3 ripe peaches or 1 large can of peaches thoroughly rinsed.
    1/4 C of 1/2 and 1/2 or light cream, I prefer light cream
    1/4 tsp nutmeg or cinnamon
    1/4 tsp vanilla

    Cut up the peaches into 1/2 inch pieces and freeze solid. Roughly 2 hours.
    Place the frozen peaches into a food processor
    Add the cream, nutmeg/cinnamon, and a pinch of salt. Salt makes the dish taste much better.
    Blend until creamy smooth and serve.
    Total working time is about 5 minutes including clean up.

    Note: when you are done the consistency should be that of ice cream. A blender won't give you that. However you can use this to make a killer peach milk shake. Just add more milk, and double the salt. Salt dosn't cause the flavors to blend. That's a misconception. Salt makes your taste buds more sensitive to flavor.

    One more kid friendly recipe

    Take any fresh fruit, strawberries, bananas, raspberries, blackberries, tart apples, pears, etc
    Butter some good bread, apply a copious amount of creamy peanut butter to both pieces of bread, layer thick with fresh fruit, combine and enjoy. Cut into 4 equal slices, add a cold glass of milk and you've got a right nice meal.

    Nothing better than peanut butter on bread, except for peanut butter on hot toast, or maybe peanut butter and banana sandwiches, or peanut butter and chocolate, or peanut butter and marshmallow fluff....

    Anyhoo, when I cook I hope for leftovers that the girl can take to school for lunch the next day and anything with peanuts are right out. Halifax has a peanut-free school system. Peanut butter is reserved for weekends, sigh.

    I used to make this when I was ten:

    pre-heat oven to 180• celcius.

    Combine in a bowl:
    5 cups flour (not self raising)
    3 cups sugar
    1 cup melted butter
    4 cups buttermilk
    3 tsp baking soda
    3 tbsp cocoa powder
    2 tbsp ground cinnamon

    Distribute evenly in well greased, large tin (12 by 15 inches or so) and bake for about 45 minutes till a cake needle comes out clean.

    Will keep for all eternety in the fridge, but tends to disappear rather quickly.

    Oh, and it's called Saupkake, literally "buttermilk cake".

    'nother kid friendly recipe

    My mother used to make this for us in the summertime. I don't know what it's called other than inexpensive and yummy

    2 pkgs instant butterscotch pudding
    graham crackers

    prepare the pudding as directed.
    in a 9x9 baking dish
    start with a thin layer of pudding
    top it with a layer of graham crackers
    repeat until you reach the top of the dish
    Cover with plastic wrap and let it sit in the fridge until completely chilled
    Top with whipped cream and enjoy

    Works well with chocolate pudding, vanilla pudding, or for some parfait action, use one more than one type of pudding. I'm partial to butterscotch tho. If I remember correctly, my Mother would make the pudding a little runny and let the graham crackers absorb the extra liquid

    Not sure what kind of food you like but here's what I do to minimize time in the kitchen.

    Keep your knives sharp. It takes less time to prep food when the knife is sharp.
    Buy pre-cut veggies if possible. They are more expensive but it's faster to use them. When preparing rice, potatos, or noodles, cook a double batch, then use the extra the following nite. All you have to is heat it up in the microwave. Also get a rice steamer. You can start the rice and walk away. 30 minutes later it's ready. It's a great way to cook rice and not have to tend to it.

    Here's a quick tasty recipe for that we all like
    Cube up one chicken breast , or 4 ounces of beef or pork per person.
    1-2 cans of chopped tomatoes in Italilan herbs, Contadina brand is my fav.
    Sautee the meat until it's about half cooked, add the tomates and cook for 5-10 minutes more. Serve over rice or noodles.

    Another quicky
    Slice potatos into 1/4 inch pieces. Spread out over a cookie sheet lined with parchment paper or aluminum foil. Brush with oil. Sprinkle with salt and pepper, Italian bread crumbs and parmesan cheese. Broil for 15 minutes or until browned and tender.

    1 chopped chili
    1 clove crushed garlic
    1 chopped onion
    8 strips good bacon, cut into small pieces
    1 tin crushed tomatoes
    1 tsp sugar or honey
    seasoning as preferred

    Fry bacon till golden, add onion, chili and garlic and fry till bacon is done. Add tomatoes and sugar and cook through. Season to taste.

    Serves 2.

    Kid friendly and quick

    "Spanish Rice"

    Large microwave safe glass casserole.
    Chopped onion and 1 lb ground beef. Cover, nuke on High 2 mins., Stir, nuke on high for another two minutes. Drain off excess fat. Pour in 1 can stewed tomatoes, and 1 can of whole kernel corn, a half jar of medium salsa. Add some Italian seasoning, if desired. Stir while adding about 3 cups instant rice. (The rice should be covered by the liquid) Nuke covered for 30 minutes. Set the table and prepare any warm bevvies. When the microwave stops, wait about five minutes. (Just long enough to get the bevvies and condiments on the table) serve. will feed about six people.

    This reminds, tho I can't understand why it does, of my all time favorite pasta sauce.

    1 large can of chopped tomatoes
    chiffonade of 8-10 fresh basil leaves( really thin strips )
    8-10 cloves of crushed garlic, powder is not an acceptable substitute for this dish.
    1/4 cup virgin olive oil.

    Combine all ingredients in a glass or stainless steel bowl except the oil.
    Seal with an airtight cover and put in the fridge for 24-48 hours.


    Take it out of the fridge, add the oil, mix thoroughly, and warm it up over low heat, you do not want to cook the sauce. Salt and pepper to taste.

    Serve over a ziti, rotini, shell type noodle.

    Note: Do not let it sit for more than 48 hours. Some sort of reaction with the garlic ruins the flavor. You can heat and serve it immediately but it won't have the same flavor.

    During hot weather I serve it at room temperature.
