I really have no familiarity with CA's Fish and Game laws, except most States are pretty similar in this regard.
A quick look at CA Fish and Game Rules and Regs shows this at the top:
§250. General Prohibition Against Taking Resident Game Birds, Game Mammals and Furbearing Mammals.
Except as otherwise provided in this Title 14, and in the Fish and Game Code, resident game birds, game mammals and furbearing mammals may not be taken at any time.

So if you have a dead game animal/furbearer in your possession, you have to account for it by having a kill tag of some sort associated with it. If you didn't take it legally with a hunting license, you need to obtain one from a Law Enforcement or Conservation Officer, depending on the rules in CA. Otherwise you could poach to your hearts content and just say "I found it." Once you've made it into a sporran, not so much, but an animal carcass or pelt, absolutely.
Anybody with the correct valid license can trap animals in California.
The following species are exempt in CA:
(a) The following nongame birds and mammals may be taken at any time of the year and in any number except as prohibited in Chapter 6: English sparrow, starling, coyote, weasels, skunks, opossum, moles and rodents (excluding tree and flying squirrels, and those listed as furbearers, endangered or threatened species).

I don't know if protected is the correct term, but they are considered a game species in most States and you do need a license to harvest them legally.
§308. Brush, Cottontail and Pigmy Rabbits, and Varying Hare (Snowshoe).
(a) General Season and Area: The general season shall open on July 1 extending through the last Sunday in January, and shall be open statewide except for that area described in (d) below.
(b) Falconry Rabbits and Hares. Brush, cottontail and pigmy rabbits and varying hare (snowshoe) may be taken with raptors only during the general rabbit and hare seasons and as follows: The season shall open on the first Monday following the close of the general season extending through the third Sunday in March, and shall be open statewide except for that area described in (d) below.
(c) Bag and Possession Limit in the Aggregate of All Species: Five per day, 10 in possession.
(d) The take of brush and cottontail rabbits is prohibited within the area described as follows: That portion of San Joaquin County generally located between Stockton and Tracy that is enclosed by the following lines: Beginning at the intersection of Stewart Road and Interstate 5; west along Stewart road to the intersection of Stewart Road and Old River; southwest along Old River to the intersection of Old River and Tom Paine Slough; south along Tom Paine Slough to the intersection of Tom Paine Slough and Sugar Cut; south along Sugar Cut to the intersection of Sugar Cut and Interstate 205; east along Interstate 205 to the intersection of Interstate 205 and Interstate 5; north along Interstate 5 to the intersection of Interstate 5 and Stewart Road.
Amendment of subsections (a) and (b) and new subsection (d) filed 6-28-2002; operative 6-28-2002 .
§309. Jack Rabbits, Black-Tailed and White-Tailed.
(a) General Season and Area: The general season shall be open statewide all year.
(b) Bag and Possession Limit: No limit.
You can take Jack Rabbits anytime and as many as you want in CA, though! Still need a license.

Oh, just noticed this on the CA Fish and Games rules re: trapping
(g) In San Diego and Orange counties only, rabbits may be taken at any time during the open season by means of box traps. Such traps shall not exceed 24 inches in any dimension, shall be tended at least once every 24 hours, and shall show the name and address of the trap owner. All rabbits taken under this section shall be immediately killed and become a part of the daily bag limit;

Well my husband has a fur bearer tag so whether we find it on the road, or find one while hunting elk, we're good on badgers, bobcats, skunks, foxes, otters, beavers, ermine, and what have you.
We did get an elk this weekend.....anyone interested in a piece of hide? (it's been salted so it'll keep until someone tans it)

So it would appear that I can collect possum, skunk and coyote with impunity, but I need to be careful if I find a racoon. I'd enjoy both a skunk and possum in my sporran menagerie; I'm a bit torn about a coyote.

I don't know what the shipping costs might be, but the prices are otherwise more than reasonable, with none of the dirty work. Still I have often thought about picking up some roadkill, but my wife would probably hit ME with the car if I brought it home.

One must be very specific with the vendor if one wishes to use a prepared hide for a full mask sporran. Firstly, there are differences tanning methods that achieve various outcomes and not all can withstand heavy use as a sporran/purse/bag. Further, many tanners pay no attention to preserving the face. Often noses are split, ears are puckered and eyes torn.

My dear wife has gotten so used to me picking up roadkills that she now helps watch for them. Depending on the temps and a post-mortem inspection they can be used for both hides and meals. I currently have a grey fox and a muskrat pelt in the freezer to be worked. Unfortunately, it's a bit warm here in TX for good roadkill so I have to wait for holiday visits back to TN to visit family.
