That's one of those things you don't think about often, but since Texas was it's own country for a bit, it would have done all the things countries do, like send ambassadors to other nations.
And now there is the "Texas Embassy", which is a Tex-Mex restaurant in London:

The cantina is located in the former offices of the White Star Line, of RMS Titanic fame. A friend of mine has been there, and liked it.
