This is for Scottish Tablet, or simply 'tablet'. It resembles fudge in texture & composition. It's a popular confection found in Scotland, sold wherever you find sweets. The wee wifie is crazy for it. This is only one recipe - they vary from grandmother to grandmother.

    Ingredients
    1.75 lb granulated sugar
0.25 cup unsalted butter (no margarine)
    half can condensed milk
    half cup whole milk
    0.5 teaspoon vanilla extract

    Method
Pour all of the ingredients into a pan.

Stir constantly 35-40 minutes on low heat and regularly scrape the mixture from the bottom of the pan, if it scorches, it's ruined. This is a bit of a work-out. The mixture will take on a golden caramel color.

To test to see if it's ready, remove a small spoonful and drop into cold water. If it begins to go solid, then it's ready.

Grease a baking tray. Pour the mixture into the tray and spread evenly. After 10 minutes, it should be set sufficiently to score pieces with a knife.

Allow to set fully in a cool place for at least an hour. Break along scores and serve. If any pieces remain, store in an airtight container.

Thank heavens this stuff is a fair amount of trouble to make, otherwise it'd addictive.

How hot do you want it? My wife makes a mean chili. I'll get the recipe from her.
