The envy of the rest
Now that all of the "tourist shops" have been mentioned, I'd suggest that Stewart Christie Ltd., 63 Queen Street, is, without a doubt, the best Highland tailor in Edinburgh, if not in all of Scotland. No "Jimmy Hats", no fridge magnets, no tourist tat; just superb tailoring.
You won't be disappointed.

No, it was not intended to be rude but, unlike many of the shops mentioned, Stewart Christie is well off the "tourist trail". As bespoke tailors (they make the uniforms for the Royal Company of Archers, for example) Stewart Christie's premises are different than those shops that line The Royal Mile as they do not rely on the passing tourist trade-- hence my choice of words.
