Tartan: MacGregor red and black (Family Tartan, also known as Rob Roy)
Weight: 13oz Worsted
Yardage: 8yd
Customization: Pleated to sett, no third strap.
Why: Tartan is my family tartan, third strap is not really functional in my eyes.
Note: After seeing kilts for years, it's no longer easy to choose a single tartan.

This is a hard thread to answer as I currently have two kilts on order. A Xmarks from Barb and a MacKinnon Red from Matt.... However, neither of these are my dream kilt....
Tartan: Antarctic
Weight: 13 oz
Yardage: 9 Yards (I am a big guy!)
Customization: No third strap. Matt is currently customizing two of my existing kilts to remove these straps.
Why: Have you seen the tartan??? Woo Hoo!
"A veteran, whether active duty, retired, national guard or reserve, is someone who, at one point in his life, wrote a blank check made payable to "The United States of America", for an amount of "up to and including my life." That is honor, and there are way too many people in this country who no longer understand it." anon

I do not have a be all end all of kilts, but I think my next kilt will be a great kilt in 16 oz MacGillivray hunting. Then there is the Chattan Box pleated kilt I want.
List Follows:
USA Bicentennial
Confederate Memorial
Utah
California
How can I pick just one?

I'm surprised nobody's gone crazy (i.e. 32oz Kevlar in Canadian Maple Leaf tartan). It is hard to narrow it down to one.

I'll play...
Tartan: ITI # 2437 (The unofficial USAF tartan)
Weight: 16 oz.
Yardage: 8
Customization: The tartan will have to be custom woven in 16 oz as it is only available in 11 oz. stock. I'd also want only 2 straps. Pleated to the red stripe.
Why: I served in the USAF and have always had a lot of pride in that. And, the tartan is absoultely gorgeous.
