    Zion and Buffalo (no kilts)

    Here's a full pic of the school house at Grafton, Utah ghost town used in the filming of Butch Cassidy and the Sundance Kid. Grafton is just south of Zion National Park



    Here's a view of the south end of Zion National Park, looking North from Grafton.



    Zion Mountain Ranch, where we stayed, has beautiful modern cabins that look out on their Buffalo herd. Here's a few buffalo (okay purists - American Bison) pics.

    Yummy! The restaurant at Zion National Ranch serves Buffalo filets and elk filets. Had buffalo Friday night and elk last night. Both melted in my mouth.

    Ironic, the State of Utah won't let them harvest and butcher from their own herd so the buffalo meat they serve is imported from Canada.

    Somewhere, read an article that said if Native people would return to eating buffalo, elk, and salmon their diabetes would disappear.

    Don't know if that's true, but know all three are yummy and easy on the belly and gut.

    There is a family the raise bison here in Forest Grove,(L-Bar-T Bison) just a few miles from me. I see there herd every time I go south on the old hwy.
    They have a booth in some of the local farmers markets around here where you can puchase some of there meat, and they sell from the store at the ranch also. I have a couple of pachages of ground bison berger in the freezer for spaghetti and such. There are also a few resturants around here that sell buffalo burgers around here. I have also had horse meat also, very good meat, but hard to find
