Vegan Haggis Recipe
I realize this might be venturing into an area of heresy in the view of some, but indulge me a little.....
Vegan Haggis
1/3 cup oatmeal
2 1/2 tbsp. vegetable oil
3 cloves garlic, minced {leeks or shallots? use your imagination!}
1 small onion
1/2 tsp. each: sea salt, freshly ground pepper
1 tsp garam masala
1/4 cup canned lentils [drained & rinsed]
3/4 cup chopped, peeled carrots
3/4 cup chopped, peeled rutabaga
1/3 cup mushrooms
1/3 cup canned red kidney beans [drained & rinsed]
1/4 cup Earth Balance margarine [or similar non-butter]
2 tbsp chopped peanuts
3 tbsp chopped walnuts
3 tbsp chopped almonds
1 tbsp water
In a small saucepan, cook oats as per package instructions. Set aside.
In a large skillet, heat oil medium-high. Add garlic, onion, salt, pepper, garam masala. Cook, stirring until onion softens [2-3 min.] Add lentils, carrots,and rutabaga. Cook, stirring, about 2 minutes. Add mushrooms, and stir in kidney beans and margarine. Add nuts and cook until slightly softened, but still retaining their "crunch."
Remove from heat, stir in oatmeal. Add water to 9 X 5" loaf pan. Add haggis mixture and cook in 350 degree F pre-heated oven until top is crispy: about 35-40 minutes.
Turn haggis out into a serving bowl, and use a fork to break it up and fluff.
Makes 4-6 servings.
Notes: Nuts, carrots and rutabaga can be chopped to create whatever texture you want. Most ingredients can vary according to taste, such as more oatmeal, or mushrooms. Cashews are excellent. Wild rice would go well, too.
