    Vegan Haggis Recipe

    I realize this might be venturing into an area of heresy in the view of some, but indulge me a little.....

    Vegan Haggis

    1/3 cup oatmeal
    2 1/2 tbsp. vegetable oil
    3 cloves garlic, minced {leeks or shallots? use your imagination!}
    1 small onion
    1/2 tsp. each: sea salt, freshly ground pepper
    1 tsp garam masala
    1/4 cup canned lentils [drained & rinsed]
    3/4 cup chopped, peeled carrots
    3/4 cup chopped, peeled rutabaga
    1/3 cup mushrooms
    1/3 cup canned red kidney beans [drained & rinsed]
    1/4 cup Earth Balance margarine [or similar non-butter]
    2 tbsp chopped peanuts
    3 tbsp chopped walnuts
    3 tbsp chopped almonds
    1 tbsp water

    In a small saucepan, cook oats as per package instructions. Set aside.
    In a large skillet, heat oil medium-high. Add garlic, onion, salt, pepper, garam masala. Cook, stirring until onion softens [2-3 min.] Add lentils, carrots,and rutabaga. Cook, stirring, about 2 minutes. Add mushrooms, and stir in kidney beans and margarine. Add nuts and cook until slightly softened, but still retaining their "crunch."
    Remove from heat, stir in oatmeal. Add water to 9 X 5" loaf pan. Add haggis mixture and cook in 350 degree F pre-heated oven until top is crispy: about 35-40 minutes.
    Turn haggis out into a serving bowl, and use a fork to break it up and fluff.
    Makes 4-6 servings.

    Notes: Nuts, carrots and rutabaga can be chopped to create whatever texture you want. Most ingredients can vary according to taste, such as more oatmeal, or mushrooms. Cashews are excellent. Wild rice would go well, too.

    sounds like stone soup.... start with a stone and some water..... add veggies...boil till tender....(the vegies)... remove stone.

    I haven't a clue what you'd use for casing. In any event, you wouldn't eat that part....

    What is the point?
    Well, as I see it, compromise can bring some pleasant surprises. In my case, I was never a big meat eater and my partner is vegan. I've learned that there are a lot of people out there with serious allergies, so I thought I'd post something alternative. It's not exactly haggis, but it is in the spirit.

    If you're gonna make a haggis without meat, I say make a dessert haggis.

    Pie crust or fillo dough or something like that, stuffed with brownie batter, cookie dough, peanut butter, fudge, and crunchy candy bits of some kind and bake it. Some sort of ubersweet monstrosity like that ought to do the trick.

    To make a more traditional filling you would need to raid your childrens' halloween stash for all the nasty bits of candy that nobody in their right mind would eat.

    That is awesome. My girlfriend is vegetarian, so this recipe may get some use.

    Thanks for posting! It sounds good. Casing? Not sure what non-meat product would accomodate the girth of a haggis. But you could sew a muslin pouch to hold it for cooking.

    Here's a source for vegetarian casings that accommodate a bladder-shaped sausage. I think it would be easier to go with the muslin, or just serve it up already cut.
