Although once a very devoted beer drinker, I'm now limited to the "very occasional" sorghum based beers or ciders. Being grain-free for a couple years now, even the non-gluten grain beers give me gut distress so I recently put the kibosh on those items as well. Because of this, my alcohol tolerance has went from the notorious "man who can drink everyone under the table" to the "man who gets drunk eating butterscotch candy".
I've been a fan of single malts (where the gluten and grain compounds (trace sugars) have been distilled out), Reisling wine, and malt-free ciders (many popular "ciders" are actually malt beverages (akin to Zima and Mike's Hard Lemonade) that are cider-flavored, such as Hornsby's and Woodchuck. I'm a Strongbow man myself. Although, I am considering making my own ciders in the near future.
I'm now where two fingers of scotch in my glencairn glass will keep me going pretty much all evening. Just enough to accompany a nice cigar. And this is a once, maybe twice weekly occurrence.

When I was in high school we had a cheer that we used at football games It went like this:
Ice cold beer
Makes you want to cheer!

Makes you want to win!
Ice Cold Duck

Our mamas didn't like us using that cheer.

For me, it was a medical issue that was unrelated to alcohol that left me not liking the feeling of buzz or intoxication (kind of NDE), I don't even like taking cold medicine unless the pain is too much. Also having a few alcoholics in my life, and seeing the damage it causes over time (not just to the alcoholic). Have no desire to go down that path.
