Structurally, since double breasted jackets have typically 4 buttons in two rows across the front, it might be hard to keep that pattern while shortening the coat to kilt length and making the requisite tapering cutout for the sporran front center bottom. I think it would depend on the position of the buttons on the front of the jacket---are they relatively high in position or relatively low---high would be easier than low to work with in this regard, but in my experience (albeit limited with wearing double breasteds) they tend to hang a bit lower in the front than most single breasteds I have worn. This could make it tough.

Let us know your results, as I have a tweed double breasted in a nice brown with box check that I had the same thoughts about a couple months ago, but instead set it aside for a while to consider the options.
