If you have to communicate with here in the future, sprinkle your email with words randomly in quotes.
"After" 18 to 24 months, "she" might start to wonder "what" is going on"?" Your "answer" would "be" - "But" I thought you liked "quotes"!

I see no problem in telling her that you don't know her well enough to know if she was joking or not and she doesn't know you well enough to be making that joke. (if it is, in fact, a joke)
And if it wasn't a joke she should be directed towards another line of work.
