Don't forget, there are many fine step-by-step directions here on the forum.
But really, for most jackets, you just mark out the curve for the sporran, describe how you want the pockets treated, and that's it. For a couple of my jackets, I used left-over cut off fabric to form those shoulder thingies and cuffs also. My next big project is a high quality used tail coat to PC.
My tailor is getting pretty good.
