The usual.. trying to combat "old wives tales." I seem to keep running into them, all those misconceptions.

- I triple check every lesson for accuracy.

- Only use credible sources.

- Use visual aides.

A little advice and experience for those considering starting a similar group:
A casual and social meal before the lesson allows people to meet everyone, relax, etc...

Doing a British Isles or European menu also helps introduce people to unique foods that most people learn they actually like. A "pot luck" is the way to go in my opinion, it allows folks to sample a multi-menu.
