No pancakes for me tonight; instead, I'll be enjoying the mother-in-law's red beans & rice and king cake at her parish's Mardi Gras party!

We call it Shrove Tuesday and always have pancakes. They start off savoury and end up sweet. They are the British style thin pancakes. Rolled up with something inside and covered with a sauce. Margaret usually saves some leftovers from the previous days as filling.

Hopefully tonight there will be one each of a curry, chili and a Bolognese filled pancake. Then come vegetable mixtures. And lastly the sweet ones, with mincemeat or jam or ice cream or a mixture of all three.

The trouble is that it is so labour intensive that Margaret has to do the cooking while we do the eating - not ideal for family dining.

So nowadays we cheat. We only make a couple of pancakes from scratch all the others are bought pre-cooked and just require heating through.

I am getting hungry just thinking about it.

    Regards

    Chas

Boudin Blanc is relatively easy to find here, but we have to have Russian cakes sent up from NOLA, which is pretty $$$.
