    Brining turkeys isn't part of my repertoire, but to keep things cool you can use a freezing mixture of ice and salt which will get down to well below 0 degrees centigrade.

    If you put it in a metal container at the top of the liquid convection, and a few stirs should ensure that the brine remains cool.

    My grandmother used to make ice cream using a hand operated stirrer with ice and salt to reduce the temperature.

    Be aware that it gets cold enough to weld your skin to the metal, so don't touch it to feel how cold it has got......
