My favorite Beatles cover was actually a Beatle covering someone elses song, Act Naturally by Buck Owens, done by Ringo.
They actually did a video duet of the song.

Glen,
I won't argue that John's solo career was the most influential. In fact, some of his solo work remains deeply personal to me. Double Fantasy was beautiful.
Unfortunately, the collaborations with Yoko I find to be wholly egregious. That colors my view (perhaps unfairly) on his post-Beatle career.

Check the liner notes of bands. Many list the Beatles as an influence. From Folk to Punk to Metal the Boys from Liverpool left a huge imprint.

I've skipped over most of this thread, so if some of what I say has been said, please forgive me. I'll also not be paying much attention after I drop my $0.02 in, so PM me if you really want to ask me about something.
I don't much care for the Beatles. (Yeah, yeah, I know, heresy, I'm evil, etc. ad nauseum-I've heard them all-I swear, Beatles fans can be like the Spanish Inquisition when they find out you don't follow their musical religion. ) I won't deny that they have had a great influence on music, but the early stuff grates on my nerves, and it colors my ability to enjoy the latter when sung by the same people.
That being said, I do think that they were wonderful songwriters, and I tend to love most Beatles covers. Our Lady Peace do a cover of Tomorrow Never Knows on the soundtrack from the movie The Craft that is utterly incredible, and Johnny Cash's Version of In My Life from American IV:When the Man Comes Around goes straight for the soul.

Memory: My first Beatles 45, would have been "Hey Jude".
Best Cover: David Bowie's version of "Across the Universe".

The Beatles Phenom was huge. They were in the right place at the right time with the near perfect marketing scheme. There couldn't have been a better time for it to happen than between the 50's and the Viet Nam war.
Nothing like that could ever happen again. Too bad, it would be fun.
