A little background on the one's pictured:
Custom-made Gilley Brogues made from 200 year old Catharina von Flensburg leather.
These come with tongues, or "Gilley" flaps, that can be removed for regular town or country wear. The tongues are traditional with country Highland dress.

Well by the looks of them I would just call those Brogues,expensive ones I grant you,With a leather flap that is, as you say detachable.We wear the flaps when out on the moor in August to stop heather seeds etc. getting into the shoe and making life uncomfortable.That is all.I have several pairs of flaps lurking around the house.We used to get the local cobler to make them for us.I have no idea where to get new ones,but HOGGS of FIFE might be worth a try.
